Scott Pelletier, owner and chef of the forthcoming Fuse Westford, was inside his new location on Monday finalizing preparations for opening day later this week.
Fuse is the newest restaurant to open in a town that, several years ago, saw restaurants sprout with the opening of Cornerstone Square at the intersection of Boston and Littleton Roads.
Pelletier has taken over the small building at Littleton and Powers Road that was once Belle’s Bistro and before that, Ye Old Ale House.

He is the owner of Fuse Bistro in Lowell and, said he’ll bring a similar menu to Westford.
“The core items probably make up about 65 percent of the menu,” he said. “Our chicken wings, our crunch burger, our pizza — those things will all stay the same. And then the seasonal items are where I’m going to differentiate the two.”
Pelletier said he will offer some farm-to-table foods. Among them will be the apples he buys from Hill Orchard in Westford. The town-owned acreage is managed by David Dumaresq, who owns farmland in Dracut.

In the first month of operations, Pelletier’s restaurant will be open Monday through Thursday, from 11:30 a.m. to 10 p.m., and Friday and Saturday from 11:30 a.m. to midnight. Once things are rolling in a month or so, the businessman said the restaurant will be open seven days a week.
Pelletier said he owned restaurants in Portland, Maine, before moving to Methuen about 10 years ago and taking a job as a chef in Haverhill at the now defunct Evenfall restaurant.
“My cooking roots are French with a little bit of Asian influence,” he said.
